Ayurvedic Moong Dhal Dhokla with Coconut Chutney
Dhokla is something like a kind of steemed cake made out of dhal. Normally it is made out of channa dal and yoghurt, and it is fermented for some hours. My creation is made out of moong, without yoghurt and non-fermented. It doesn´t get as fluffy as the original, but they turned out quite well – also according to the feedback I got. Just try and judge for yourself. It is a savory side dish. Enjoy! Jonas

Instructions
  1. Dhokla: 1. Wash and the soak the dhal for minimum 4 hours 2. Throw the water away afterwards 3. Put in a high speed blender 4. Add ca. 250-300ml water WITH GAS! (you need as much as to cover the dhal completely with water) 5. Add 1-1 1/2 teaspoons salt, 2-3 pinches of asafetida, 1 teaspoon ginger powder, ¼-1/2 teaspoon kalinji seeds, add 1 tablespoon ghee 6. Blend until smooth 7. Fill in a small cake tin (after rubbing some ghee in the tin) 8. Put in a big pot with roughly 1 liter water, insert a pan inset for steaming and put cake tin ontop, 9. Bring water to a boil and then steam the dhokla for about 20-25 min until it rises and gets an elastic feeling when you touch it. 10. Cover with cut parsley and serve with coconut chutney.
  2. Coconut Chutney: 1.Put Ghee in pot, heat 2. add mustard seeds, wait until they starting popping (close pot with lid during that process), remove pot for a few sec. then, wait until they stop popping 3. again put pot on the stove, add cumin and kalonji, stir 15-30 sec 4. add chili and ginger, asafetida + stir 5. add coconut flakes and roast them slightly on low to medium heat 2-3min 6. add coconut milk and salt, mix, done!
